Food/Beverages

Fresh Berry Spinach Salad

4 oz Black berries
4 oz Raspberries
4 oz can mandarin oranges in light syrup drained
2 tablespoon freshly grated Parmesan cheese
3/4 Raspberry vinaigrette

In a medium bowl toss spinach, berries and oranges. Sprinkle Parmesan cheese. Once plated drizzle vinaigrette and serve. (Serves 6)

*I came up with this salad for a spring brunch. It was a hit and the ladies loved it. It was a nice change to the average lettuce and tomatoes we are all used to. why not substitute for fresh berries! Give it a try and add you own twist to it. Let me know what you think :)

Sparkling Ginger Lemonade with Mint!

2 Cups of water
1 Cup of honey
2 tablespoons of minced fresh ginger root
2 cups of club soda, chilled
1 cup lemon juice (about 5-6 lemons)
3 sprigs of fresh mint
5 thin slices of lemon

In a small saucepan, bring the water, honey and ginger to a boil. Remove from heat. Cover and steep for about 10 minutes. Strain ginger and let cool. Pour cooled honey water in pitcher. Add lemon juice and lemon slices and mint leaves. Add club soda when ready to serve.

*I came across the original recipe and thought what a great combination of lemon and ginger! I happen to be a mint lover in freshly homemade drinks so I added the mint and the lemon slices. It was wonderful. This one by popular demand (my great friends lol) I had to share. As an added tip for straining the ginger I used a sifter. It was perfect for catching the tiny minced particles, while leaving the wonderful ginger flavor. Enjoy :)
